Vintage Mashbill Irish Whiskey #3
Single Cask - 46% / 92 Proof
What do we mean by Vintage Mashbill? Boann Distillery’s Vintage Mash Bill Project is an unusually ambitious collaboration with whiskey historian Fionnán O’Connor, who researched long-lost Irish whiskey recipes from the 19th and early 20th centuries as part of his PhD at TUD. Boann recreated these historic mash bills under controlled conditions, distilling each recipe separately and then maturing the resulting spirits in Bourbon, Rum, Sherry and NEOC casks, effectively using modern distilling to investigate what historic Irish whiskey actually tasted like. The project deliberately challenges the relatively narrow modern understanding of Single Pot Still whiskey, demonstrating how dramatically the character of the spirit could change through different proportions of malted and unmalted barley, oats, wheat and rye. One particularly interesting example is this P. Bermingham release #3 mashbill which was typical of early 20th century Single Pot Still Irish Whiskey. It is a double release consisting of a 46% and a cask strength bottle at 61.9%.
